Where this is Thai recipe is originated from the southern part of Thailand and are usually refer to Hat Yai Fried Chicken.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-34556\" src=\"https:\/\/sg.everydayonsales.com\/news\/wp-content\/uploads\/2021\/01\/132019023_225296482462169_8089914076461894324_n.jpg\" alt=\"\" width=\"1200\" height=\"1200\" \/><\/p>\n<h3>You\u2019ll Need:<\/h3>\n<ul>\n<li><span data-amount=\"1.5\">1 \u00bd<\/span>\u00a0lb chicken wings<\/li>\n<li><span data-amount=\"5\">5<\/span>\u00a0cloves garlic<\/li>\n<li><span data-amount=\"1\">1<\/span>\u2013<span data-amount=\"2\">2<\/span>\u00a0cilantro roots, roughly chopped<\/li>\n<li>heaping\u00a0<span data-amount=\"0.25\" data-unit=\"tsp\">1\u20444 tsp<\/span>\u00a0black peppercorns<\/li>\n<li>heaping\u00a0<span data-amount=\"0.25\" data-unit=\"tsp\">\u00bc tsp<\/span>\u00a0white peppercorns<\/li>\n<li><span data-amount=\"1.5\" data-unit=\"tbsp\">1 \u00bd Tbsp<\/span>\u00a0sugar<\/li>\n<li><span data-amount=\"3\" data-unit=\"tbsp\">3 Tbsp<\/span>\u00a0soy sauce<\/li>\n<li><span data-amount=\"0.5\" data-unit=\"tsp\">\u00bd tsp<\/span>\u00a0salt (if marinating overnight, cut down to\u00a0<span data-amount=\"0.25\" data-unit=\"tsp\">\u00bc tsp<\/span>)<\/li>\n<li><span data-amount=\"0.25\">\u00bc<\/span>\u00a0\u2013\u00a0<span data-amount=\"0.33333333333333\">\u2153<\/span>\u00a0cup water (If the chicken is already wet from washing, add only\u00a0<span data-amount=\"0.25\" data-unit=\"cup\">\u00bc cup<\/span>)<\/li>\n<li><span data-amount=\"0.5\" data-unit=\"cup\">1\u20442 cup<\/span>\u00a0thinly sliced shallots (for fried shallots)<\/li>\n<li><span data-amount=\"0.25\">1\u20444<\/span>\u00a0\u2013\u00a0<span data-amount=\"0.5\">1\u20442<\/span>\u00a0cup rice flour<\/li>\n<li>Sticky rice for serving (optional)<\/li>\n<\/ul>\n<h3>Steps:<\/h3>\n<h4><em>Fried Shallots:<\/em><\/h4>\n<ul>\n<li>Clean and slice the shallot into evenly and thin strips.<\/li>\n<li>Lay the sliced shallots on a plate lined with paper tower, then sprinkle salt over the shallot and make sure all pieces are salted and let the shallots sits for a while.<\/li>\n<li>Before frying the shallots, use a paper towel and press it onto the shallots to make sure that all the water is being absorbed off.<\/li>\n<li>Add about 1&#8243; of oil into a frying pan and heat it over to medium heat. Then transfer all the shallots into the oil and keep heating the oil until the shallots are bubbling all over. Reduce heat to low and keep frying, stirring it constantly until they are golden brown.<\/li>\n<li>Once the shallot is golden brown then drain the shallot on a paper towel to remove the excessive oil.<\/li>\n<\/ul>\n<h4><em>Marinade:<\/em><\/h4>\n<ol>\n<li>Use a mortar or pestle to pound the garlic, cilantro roots and peppercorns into a fine paste.<\/li>\n<li>Then transfer all the mixture into zip-lock bag or a bowl and add salt, sugar, soy sauce, water and mix well.<\/li>\n<li>Add the chicken and let it marinade for least 2 hours, in between make sure you flip the bag halfway through or stir the chicken to ensure the whole chicken is being marinated.<\/li>\n<\/ol>\n<h4><em>Fried Chicken:<\/em><\/h4>\n<ul>\n<li>Transfer the chicken out and then add oil into a frying pan, and heat the oil until it reaches 350 \u00b0F.<\/li>\n<li>While waiting for the heat to build you, add the rice flour, \u00a0\u00bc cup at a time, and stir until you have a thin batter to coat the chicken which you have marinated.
